INGREDIENTS FOR THE CAKE
• 150 gm dried cranberries
• 200 gm chopped prunes
• 50 gm raisins
• lemon
• 2 tablespoon orange zest
• 750 ml orange juice
• 150 gm butter
• 200 gm all-purpose flour
• 1 teaspoon powdered cinnamon
• 1/4 teaspoon clove powder
• 3 egg
• 1/2 teaspoon baking powder
• teaspoon vanilla essence
• 175 gm brown sugar
• 10 cashews
Step1.
Combine the cranberries, prunes, and raisins in a large mixing bowl. Mix in the lemon juice, orange juice, and orange zest. Allow the dry fruits to soak in the juices overnight. Preheat the oven to 160 degrees Celsius. Grease and line the bottom and sides of a 9-inch diameter pan with parchment paper.
Step2.
Place the soaked dry fruit mixture in the pan, turn on the heat, and bring the mixture to a boil. Cook for 3-4 minutes.
Remove from the heat and set aside to cool. Combine all-purpose flour and baking powder in a mixing basin.
Set it away. In a separate bowl, cream together the butter and sugar. Mix in the eggs thoroughly.
Step3.
Mix in the cashews, vanilla extract, cinnamon, and clove powder to the egg mixture. Combine the dry fruit mixture with the juice and flour mixture. Fold everything carefully. Transfer the mixture to the prepared baking dish and smooth it out with a spatula. For baking, you can use a circular or square dish.
Step4.
Bake the cake for 50 minutes, or until a skewer inserted into the center comes out clean. Allow the cake to cool for a few minutes in the oven. Remove the cake from the oven and allow it to cool fully. Remove the pan with care and peel off the parchment paper. Wrap the cake in cling film and store it. Slice and serve.
