  • 1/4 cup fresh cilantro leaves, chopped

  • 1/2 cup plain yoghurt
  • 1 tsp red chili powder
  • 1 tsp roasted cumin powder
  • Salt to taste
  • Sev (crunchy fried noodles made from chickpea flour) for garnishing

Instructions:

  1. In a mixing bowl, combine boiled chickpeas (if using), boiled potato (if using), finely chopped onions, tomatoes, and cilantro leaves. Mix well and set aside.
  2. Arrange the Papdis on a plate.
  3. Add a spoonful of the chickpea-potato-onion mixture over each Papdi.
  4. Drizzle some tamarind chutney, mint chutney, and coriander chutney over the Papdis.
  5. In a separate bowl, whisk the yoghurt with salt, red chili powder, and roasted cumin powder until smooth.
  6. Drizzle the yoghurt mixture over the Papdis.
  7. Garnish with Sev and some more cilantro leaves.
  8. Serve immediately and enjoy the burst of flavors.

You can adjust the amount of chutneys and spices to suit your taste preferences. You can also add other toppings like pomegranate seeds or crispy fried noodles for extra texture.
