6 cups of stale bread, cut into 1-inch cubes

1 red onion, thinly sliced

1/2 cup fresh basil leaves, chopped

1/2 cup of good-quality olive oil

3 tablespoons red wine vinegar

2 cloves of garlic, minced

Salt and freshly ground black pepper, to taste

1. In a large bowl, combine the bread cubes, chopped tomatoes, sliced cucumber, and sliced red onion.

2. In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper to make the dressing.

3. Pour the dressing over the bread and vegetable mixture, and toss to combine.

4. Let the salad sit for about 10 minutes to allow the bread to soak up the dressing and become softer.

5. Just before serving, add the chopped basil leaves and toss them again. Serve the Panzanella salad at room temperature, garnished with additional basil leaves or cheese if desired.
