  • 1 can diced tomatoes (14.5 ounces)
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 head cabbage, chopped
  • 1 cup pearl barley
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté for 3-4 minutes until the onion is translucent.
  3. Add the vegetable broth, water, diced tomatoes, carrots, celery, cabbage, barley, thyme, salt, and pepper to the pot.
  4. Stir well to combine all the ingredients.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 45-50 minutes, or until the barley is tender.
  6. Taste the soup and adjust the seasoning as needed.
