Aloo Puri: North India’s Delicious recipe for a quick Breakfast or Brunch

Ingredients:

  • 2 cups of all-purpose flour (maida)
  • 3 medium-sized potatoes, peeled and cubed

  • 1 tsp cumin seeds (jeera)
  • 1 tsp turmeric powder (haldi)
  • 1 tsp coriander powder (dhania)
  • 1 tsp garam masala powder
  • Salt to taste
  • Oil for frying
  • Water as required

Instructions to Cook:

For the dough:

  1. In a mixing bowl, add 2 cups of all-purpose flour and salt to taste. Mix well.
  2. Add water little by little and knead it into a soft and smooth dough. Cover the dough and let it rest for 20-30 minutes.

For the potato curry:

  1. In a pan, heat oil and add cumin seeds.
  2. Add onions and green chillies and sauté until the onions are translucent.
  3. Add turmeric powder, coriander powder, garam masala powder, and salt to taste. Mix well.
  4. Add cubed potatoes and mix well. Add a little water and cover the pan. Cook until the potatoes are soft and the curry is thick.

For the puri:

  1. Heat oil in a deep frying pan or kadhai.
  2. Divide the dough into small balls and roll them into circles.
  3. Fry the puris in hot oil until they puff up and turn golden brown.
  4. Serve hot with potato curry.
