When it comes to Indian snacks, Kachori is a popular choice among many. Kachori is a popular Indian snack that originated in Rajasthan. It is a deep-fried pastry that is filled with a spicy mixture of lentils, peas, or potatoes. Kachoris are usually served with tamarind or mint chutney and are a perfect snack for any occasion.

However, if you are on a low carb diet, Kachori might not be the best option for you. A traditional Kachori is made with flour, which is high in carbohydrates. But fear not, as we bring you a recipe for Low Carb Kachori that is both delicious and healthy.

Ingredients:

For the dough:

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ajwain seeds
  • 2 tablespoons ghee
  • 1/2 cup warm water

For the filling:

  • 1/2 cup grated paneer
  • 1/4 cup chopped spinach
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons ghee

Instructions:

  • In a mixing bowl, combine the almond flour, coconut flour, salt, and ajwain seeds.
  • Add ghee and mix well.
  • Slowly add warm water to the mixture and knead it into a smooth dough.
  • Cover the dough and let it rest for 15-20 minutes.
  • In the meantime, prepare the filling. In a pan, heat 2 tablespoons of ghee.
  • Add cumin and coriander seeds and let them splutter.
  • Add grated ginger and sauté for a minute.
  • Add chopped spinach and cilantro and cook for 2-3 minutes.
  • Add grated paneer, turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
  • Turn off the heat and let the filling cool down.
  • Preheat the oven to 350°F.
  • Divide the dough into 8 equal portions and roll them into balls.
  • Flatten each ball with your hands and create a small well in the center.
  • Add a spoonful of the filling in the center of each flattened dough ball.
  • Close the dough ball around the filling, making sure it is sealed well.
  • Place the filled dough balls on a baking tray lined with parchment paper.
  • Brush each kachori with ghee.
  • Bake the kachoris for 20-25 minutes or until they are golden brown.
  • Serve hot with chutney or yogurt.

Low-carb kachori is an excellent alternative to traditional high-carb kachoris, especially if you are on a low-carb diet. This recipe is not only delicious but also healthy and easy to make.
