It’s a common belief that breakfast is the most important meal of the day. Parents and doctors have always advised us to have ‘breakfast like a king‘, and for good reason. It’s a great way to get nutrients that propel your metabolism and keep you energized throughout the day. However, to reap the benefits of a good morning meal, it is imperative to start healthy. Unfortunately, the options reduce when you don’t prefer non-veg, but you need not worry as we have come up with recipes which will make your mornings lighter. 

1. Poha

Originally a Maharashtrian breakfast it can also be eaten as a light snack. Very high on nutrients, you can alter it according to your spice meter. It’s a very healthy, delicious and nutritious dish, which people enjoy across the nation. 

2. Upma

Fried pulses, suji, peas, mustard seeds and cumin is all it takes to whip up a hot plate of Upma. This traditional South Indian breakfast delight should be drizzled with lime juice and served with fresh coconut chutney or lime pickle.

3. Oats Idli

We’ve got another great surprise for our calorie-conscious veg friends – Oats Idli. Take some roasted oats, grated carrots, chopped chillies, and coriander and steam this batter to get feather-light scrumptious idlis. Ideal for those who are calorie conscious. Oats being rich in minerals, vitamins and proteins give this dish a high nutritive value without compromising on the delicious taste.

4. Khichdi

The ultimate comfort food of India, khichdi is a light and easy dish to prepare. It is known as Pongal in Tamil  Nadu, Huggi in Karnataka, Pulagam in Andhra, and Khichdi in parts of North India. It is popularly made with just two basic ingredients – rice and lentil – which bring a sense of warmth and comfort.

However, there are many versions of khichdi made in different households around the country. This version of khichdi is cooked with Sabudana and garnished generously with saffron, perfect to cook and relish during the Navratri season as well.

5. Vegetable Stew

A stew is another comfort dish that requires very little time and ingredients and is extremely light on the stomach. Choose your veggies such as carrots, cauliflower and corn and prepare this stew at home along with cloves, cardamom, cinnamon green chillies, ginger and curry leaves simmered well in coconut milk.
