Rogan Josh: A Flavorful Journey to the Heart of India

  • 2 tbsp ghee or oil

Instructions:

  1. Heat the ghee or oil in a large pan over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and ginger to the pan and cook for another minute.
  3. Stir in the spices (cumin, coriander, chili powder, garam masala, paprika, cardamom, and cinnamon) and cook for 2 minutes, until fragrant.
  4. Add the cut pieces of lamb or beef to the pan and cook until browned on all sides.
  5. Pour in the can of crushed tomatoes and add salt and pepper to taste. Stir well to combine.
  6. Cover the pan with a lid and simmer over low heat for 1-2 hours, until the meat is tender and the sauce has thickened.
  7. Serve over rice or with freshly baked naan bread.
