Recipe for Paneer Pasanda
Make an onion-cashew paste first. Take one cup of finely chopped onions and one cup of water to make this. The two should be combined and cooked for 5–6 minutes over medium heat, stirring occasionally. Place it aside and let it cool. Create a smooth paste in a blender by combining it with five to six garlic cloves, a small piece of ginger, and roughly chopped cashew nuts.
Now, add the onion-cashew paste to the hot oil in the pan. On medium heat, cook for a few minutes before adding the garam masala and chili powder. At a medium temperature, continue to cook while stirring for an additional 3 to 4 minutes.
Add one cup of whipped cream while the sauce is simmering. Mix thoroughly and heat for a short time.
The brown onion paste is added next. Keep everything ready in advance. All you have to do is deep-fry a cup and a half of the onion slices in oil. After they have become brown and crispy, wipe off any extra oil with absorbent paper and allow them to cool. The fried onions are then blended into a smooth paste using 1/4 cup of water.
As specified in the preceding steps, add salt and 1/4 cup water to the mixture of onion-cashew paste and brown onion paste. Stir occasionally while cooking over a medium burner. Attempt to achieve a rich, creamy gravy. Triangles of packed paneer are then added.
One of the recipe’s most important tasks is creating the stuffed paneer triangles. Take about 30 triangles of paneer. To make the stuffing, combine 12 cups of paneer crumbles with coriander, mint, raisins, and cashew nuts (all chopped). Additionally, stir in half a teaspoon of each of the following: ginger, garlic, and green chili paste. To taste, add salt.
On a clean, dry surface, arrange half of the paneer triangles. Evenly spread each slice with the stuffing you made in the previous step. Next, place a triangle slice of paneer on top of each piece. Shallow-fry the packed paneer in hot oil after carefully dipping it in a slurry of cornflour and water. Cook them until both sides are golden brown. The paneer stuffing for the paneer pasanda gravy is prepared in this manner.
After adding these triangles of packed paneer that have been shallow-fried to the sauce, garnish with cilantro and serve immediately with naan, chapati, or parathas.
