Ragda Patties or Aloo Tikki Chaat: Potatoes with a touch of Maharashtrian Delight

Ingredients for Aloo Patties:

  • 4 medium-sized potatoes, boiled and mashed
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon amchur powder (dry mango powder)
  • 1 tablespoon chopped coriander leaves
  • Salt to taste
  • Oil for frying

Ingredients for Ragda:

  • 1 cup dried white peas (vatana), soaked overnight
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • 1 tablespoon oil
  • Salt to taste

For the Chutneys:

  • 1/2 cup sweet tamarind chutney
  • 1/2 cup mint chutney
  • 1/2 cup coriander chutney

For Garnish:

  • Chopped onions
  • Chopped tomatoes
  • Chopped coriander leaves
  • Sev (fried noodles)

Instructions to cook:

  1. To make the Aloo Patties, mix together mashed potatoes, turmeric powder, red chili powder, coriander powder, cumin powder, amchur powder, chopped coriander leaves, and salt in a bowl.
  2. Divide the mixture into equal portions and shape into patties.
  3. Heat oil in a pan and fry the patties until golden brown and crispy. Set aside.
  4. To make the Ragda, pressure cook soaked white peas with turmeric powder and salt for 2-3 whistles until they are soft.
  5. In a pan, heat oil and add red chili powder, coriander powder, cumin powder, and garam masala powder. Saute for a minute.
  6. Add the cooked white peas with its water to the pan and let it simmer for 5-7 minutes.
  7. Mash some of the white peas to thicken the stew.
  8. To serve, place two Aloo Patties on a plate and pour a generous amount of Ragda over them.
  9. Add sweet tamarind chutney, mint chutney, and coriander chutney on top.
  10. Garnish with chopped onions, tomatoes, coriander leaves, and sev.
