How to make Karnataka’s perfectly Crispy Nippattu at home?

Originated in the state of Karnataka, Nippattu is crispy fried rice crackers whose other variants can be observed not only across the country but across the globe.

This popular snack that is typically served during festivals and special occasions, such as Diwali, weddings, and birthdays. The name “nipattu” is derived from the Kannada word “nipat,” which means “to press” or “to flatten,” which is exactly how the snack is prepared.

Nipattu is a savory snack that is high in calories and fat, so it should be consumed in moderation. However, it also contains several essential nutrients, such as carbohydrates, protein, fiber, and iron. The addition of peanuts to the snack provides a good source of healthy fats and protein, while the use of spices such as cumin, coriander, and chili powder adds flavor and antioxidants.

However, these days people are health conscious therefore you can come across many recipes online or even influencers talking about baked or air-fried nippattu in case you are looking for a healthy alternative. 

Although, we are going to stick to the OG recipe, it is needless to mention that only one step has to be alternated, i.e, deep-frying shall be substituted with baking or air-frying and we will be just fine. 

So here’s an OG recipe for nipattu: 

Ingredients:

  • 1 cup rice flour
  • 1/2 cup gram flour (besan)
  • 1/2 cup roasted peanuts, coarsely ground
  • 2 tablespoons sesame seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon chili powder
  • 1/2 teaspoon asafetida powder
  • Salt to taste
  • Water as needed
  • Oil for deep frying

Instructions:

  1. In a mixing bowl, combine rice flour, gram flour, ground peanuts, sesame seeds, cumin seeds, chili powder, asafetida powder, and salt. Mix well.
  2. Gradually add water to the mixture and knead it into a soft and smooth dough. The amount of water needed will depend on the quality of the flour.
  3. Take a small portion of the dough and roll it into a ball. Place the ball on a flat surface and flatten it with your hands or a rolling pin to form a thin, circular shape.
  4. Heat oil in a deep frying pan or kadai on medium flame.
  5. Gently place the flattened dough into the hot oil, and using a slotted spoon, turn over the nipattu and fry until it is golden brown and crispy.
  6. Remove the nipattu from the oil and drain the excess oil on a paper towel.
  7. Repeat the process with the remaining dough.
  8. Let the nipattu cool completely and store it in an airtight container.
