Ingredients-
- 1 kg carrot, grated
- 2 cups low-fat milk
- 1-2 tablespoon melted ghee
- 1 teaspoon cardamom (elaichi) powder
- Jaggery to taste
- Chopped pistachios or other nuts, to garnish
Directions-
- Place a pan over medium heat and when it’s hot, add the ghee.
- Now add the carrot shreds and stir-fry for 8 minutes, or until the carrots are dry and have absorbed the ghee, while constantly stirring. They should be a deep orange/red colour at this point.
- Coat the cooked carrots in cardamom powder, then add the jaggery and milk and stir until everything is well distributed.
- Stir constantly over a medium-low heat until the milk evaporates.
- Sprinkle chopped nuts on top.
- Serve hot, or store in an airtight jar in the fridge for later use.
