Mediterranean Cuisine
Unlike many other ethnic cuisines, Mediterranean cuisine is not the product of a specific ethnic group or culture. Instead, it is a fusion of flavours brought by different cultures who live in the Mediterranean sea region.
The sunny and mild Mediterranean climate supports a higher yield of many vegetables in this region. Hence you see the influence of many vegetables in this cuisine. The most commonly used ingredient in this cuisine, olive, is grown in large amounts in these areas. In this cuisine, Vegetables appear in various ways in dishes, baked, roasted, sautéed, grilled, puréed, and served fresh in salads. They also use a lot of chickpeas in their cuisine in some other forms.
There are many signature dishes in this cuisine, but mostly you will hear about Pita Bread, Hummus, Tahini sauce and falafel. All of their dishes will include either of these four. Today, Snackfax we will be sharing a Veggie Shawarma roll. Pita bread, along with hummus and sauteed vegetables, is rolled. Drooling already? Wasting no time, let’s get into the recipe part.

Ingredients
For the Pita
- 2 cups – Whole Wheat Flour
- 1 tablespoon – Dry yeast
- 1/2 cup – Milk
- 1 tablespoon – Sugar
- Salt to taste
For Pickled Vegetables
- 1 Cucumber, julienne
- 1 Carrot (Gajjar) , julienne
- 1 Tomato, pulp removed and julienned
- 1/4 cup – Chilli vinegar
- 1 teaspoon – Salt
- 1 teaspoon – Sugar
Other Ingredients
- 1 cup – Hummus( homemade or store-bought)
- 1 cup – Tahini Sauce (homemade or store-bought)
- 1 Onion, chopped
Directions
To make Veggie Shawarma, first, we have to make Pita Bread.
Step 1: Pita Bread
- To begin making the Veg Shawarma Recipe, heat the milk to a lukewarm temperature and mix it with the yeast and sugar in a mixing bowl. Allow it to sit for a while until bubbles appear. This is when the yeast begins to grow.
- Later, gradually add the flour, salt, and water to form a soft dough. Continue kneading for at least 10 minutes on a working surface before placing it in the same bowl.
- Cover it with a damp cloth and keep it somewhere warm to rise and double in size.
- Take the dough and knock out the dough to let the air out. Knead one more time, then make small balls.
- Heat a flat skillet, sprinkle some flour on your work surface, and begin rolling one of the balls into a round-shaped flatbread; the bread should not be rolled too thin and should be large enough to stuff the veggies and roll up to form a roll.
- Repeat with the remaining dough and set the bread aside.
Step 2: Pickled Vegetables
- Pickle the cucumber, tomatoes, and carrot in a separate bowl with the chilli vinegar, salt, and sugar.
- You can prepare hummus and Tahini sauce at home or buy it outside.
Step 3: Assembly of Shawarma
- It’s time to put the shawarma together. Take pita bread and evenly spread 2 tablespoons hummus and 1 tablespoon tahini sauce.
- In the centre, place cucumber, carrot, and tomato juliennes. Place the chopped onion on top and roll it up tightly.
- Use a cut butter paper to wrap the rolled shawarma around and fold the end inside before serving.
