Carrot Cake: Bake Sweet Memories!

Cakes are known to lift up our mood at any time of the day. Whether it is a birthday party, marriage anniversary, wedding ceremony, graduation day or just any simple occasion, a cake is necessary for the celebration to be whole. But not only that, cakes are everyone’s favourite dessert. Even after the most filling dinner, one always has some space left in one stomach for dessert and when it comes to cakes then a little more space is added. There are so many different types of cakes which are so pleasant to your taste buds that it makes you want to put them on a throne.

Indians mostly go for an eggless cake when given a choice. We can not think of a better eggless cake than a Carrot Cake. It is a protein-rich sweet treat which is a very healthy choice. You can enjoy it without worrying about all the calories and fats that most desserts contain. It is so beneficial that it can be even served to toddlers, of course responsibly. It has carrots which our parents always made us eat when we were small because it helps in providing a good vision. The cake goes best with cream cheese frosting and you can also add walnuts and raisins to the cake. You should try making this protein-rich, vitamin A-induced and finger-licking good cake at home.

How to make

For the base

Ingredients

  • 240 ml cup
  • One cup whole purpose flour
  • ¾ tbsp baking soda
  • ¾ tbsp baking powder
  • Salt to taste
  • ½ tbsp cinnamon powder
  • Four tbsp olive oil
  • ½ cup sugar
  • 100 ml milk
  • One tbsp vinegar
  • One tbsp vanilla extract
  • ¾ cups finely grated carrots 

Preparation

  1. Preheat the oven to 180 degrees Celcius for about 15 mins.
  2. Grease a six-inch pan and line it.
  3. Mix 90 ml of milk, vinegar, oil, vanilla and sugar until the sugar is dissolved completely.
  4. Fluff up the flour and then spoon it into the measuring cup. Level it.
  5. Sieve flour, salt, cinnamon baking powder and baking soda and mix them together.
  6. Mix the dry and wet ingredients without creating any lumps.
  7. Add the grated carrots to the mixture and mix everything well.
  8. Bake the cake for about 30 mins.

For the frosting

Ingredients

  • ½ cup cream cheese
  • One tbsp softened butter
  • Four tbsp powdered sugar
  • One tbsp vanilla extract
  • Two tbsp chopped walnuts

Preparation

  1. Add cream cheese and butter to a mixing bowl. Whisk until you get a smooth texture.
  2. Add powdered sugar and beat until the frosting looks smooth and fluffy.
  3. Transfer the frosting to the cake and decorate it however you want.
  4. Drizzle some chopped nuts on your cake.

Your carrot cake is ready to be served for dessert. Cut it into small portions: pro tip – warm your knife before cutting the pieces for that perfect bakery finish. Enjoy this healthy dessert on a beautiful breezy evening and impress everyone with your baking skills.
