How to make
For the base
Ingredients
- 240 ml cup
- One cup whole purpose flour
- ¾ tbsp baking soda
- ¾ tbsp baking powder
- Salt to taste
- ½ tbsp cinnamon powder
- Four tbsp olive oil
- ½ cup sugar
- 100 ml milk
- One tbsp vinegar
- One tbsp vanilla extract
- ¾ cups finely grated carrots
Preparation
- Preheat the oven to 180 degrees Celcius for about 15 mins.
- Grease a six-inch pan and line it.
- Mix 90 ml of milk, vinegar, oil, vanilla and sugar until the sugar is dissolved completely.
- Fluff up the flour and then spoon it into the measuring cup. Level it.
- Sieve flour, salt, cinnamon baking powder and baking soda and mix them together.
- Mix the dry and wet ingredients without creating any lumps.
- Add the grated carrots to the mixture and mix everything well.
- Bake the cake for about 30 mins.
For the frosting
Ingredients
- ½ cup cream cheese
- One tbsp softened butter
- Four tbsp powdered sugar
- One tbsp vanilla extract
- Two tbsp chopped walnuts
Preparation
- Add cream cheese and butter to a mixing bowl. Whisk until you get a smooth texture.
- Add powdered sugar and beat until the frosting looks smooth and fluffy.
- Transfer the frosting to the cake and decorate it however you want.
- Drizzle some chopped nuts on your cake.
