Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cashews, unsalted
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup snow peas or sugar snap peas
  • 2 green onions, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Optional: red pepper flakes for heat (to taste)
  • Cooked rice or noodles for serving

Instructions:

  1. In a small bowl, combine the soy sauce, oyster sauce, hoisin sauce, cornstarch, and water. Stir well to dissolve the cornstarch and set aside.
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cashews and toast them for a few minutes until lightly golden. Remove the cashews from the skillet and set them aside.
  1. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
  1. Add the chicken pieces to the skillet and cook until they are no longer pink in the center, stirring occasionally. This should take about 5-7 minutes.
  1. Once the chicken is cooked, add the sliced red bell pepper and snow peas to the skillet. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.
  1. Give the sauce mixture a quick stir to ensure the cornstarch is well incorporated, and then pour it into the skillet with the chicken and vegetables. Stir everything together and let it simmer for 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
