Made with paneer (cottage cheese) and potato filling, rolled in a buckwheat (kuttu) flour dough, and then deep-fried until crispy and golden brown. This dish is not only delicious but also packed with nutrients, making it taste like street food rather than a Vrat food.
In order to get bougie feels during your Vrat, you need to have the following:
Ingredients:
- 1 cup buckwheat flour (kuttu ka atta)
- 1/2 cup water
- Rock salt (sendha namak) to taste
- 1 cup paneer, crumbled
- 1/2 cup boiled and mashed potatoes
- 2 green chilies, chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- Rock salt (sendha namak) to taste
- 1 tablespoon chopped coriander leaves
Instructions:
- In a mixing bowl, combine buckwheat flour, rock salt, and water to make a smooth dough. Cover and keep it aside for 15-20 minutes.
- In a pan, heat 1 tablespoon of ghee (clarified butter) over medium heat. Add cumin and coriander seeds and let them splutter.
- Add the crumbled paneer, mashed potatoes, chopped green chilies, rock salt, and chopped coriander leaves to the pan. Mix well and cook for 3-4 minutes.
- Divide the dough into equal-sized balls and roll out each ball into a small circle.
- Place a spoonful of filling in the center of the circle and roll it into a cylindrical shape.
- Heat oil in a deep pan over medium-high heat.
- Gently drop the rolls into the hot oil and fry until golden brown.
- Remove the rolls from the oil and place them on a paper towel to remove excess oil.
- Serve hot with mint chutney or any other vrat-friendly dipping sauce.
