Instructions:

  • Heat the oil in a pan over medium-high heat. Add the onions and bell peppers and sauté until they are soft and tender.
  • Add the paneer to the pan and cook for 2-3 minutes until it is slightly browned.
  • Add the cumin powder, coriander powder, paprika, chili powder, and salt. Mix well and cook for another minute.
  • Preheat a griddle or a large pan over medium-high heat. Place a tortilla on the griddle and add 1/4 cup of the paneer and vegetable mixture to one side of the tortilla.
  • Sprinkle 1/4 cup of shredded cheese over the paneer mixture.
  • Fold the other half of the tortilla over the filling and press down gently with a spatula.
  • Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.
  • Repeat the process with the remaining tortillas and paneer mixture.
  • Serve hot with sour cream and salsa on the side.
