Ingredients:

  • 1 cup Foxtail Millet
  • 2 cups water
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 1 green chili, chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 cup mixed vegetables (carrots, peas, beans, cauliflower)
  • Salt to taste
  • Oil for cooking

Instructions:

  1. Wash and soak the Foxtail Millet in water for 30 minutes.
  2. In a pan, heat oil and add cumin seeds. Once they splutter, add onions and green chili and sauté till the onions turn translucent.
  3. Add ginger-garlic paste and sauté for a minute.
  4. Add tomatoes, coriander powder, garam masala powder, and salt. Cook till the tomatoes turn mushy.
  5. Add the mixed vegetables and cook for a few minutes.
  6. Drain the Foxtail Millet and add it to the pan. Add 2 cups of water and mix well.
  7. Cover the pan and cook on low flame for 20-25 minutes or until the Foxtail Millet is cooked and the water is absorbed.
  8. Serve hot with raita or chutney.
