Recipe Steps

Step 1: Rinse the quinoa in a fine-mesh sieve and drain well. In a medium-sized saucepan, bring 1 cup of water to a boil, then add the quinoa. Reduce the heat to low, cover the saucepan, and let it cook for about 15 minutes until the quinoa is tender and the water has been absorbed. Remove from heat and let it cool for a few minutes.

Step 2: In a small saucepan, add coconut milk, maple syrup, cocoa powder, coconut oil, vanilla extract, and salt. Heat the mixture over medium heat, stirring continuously, until it comes to a gentle boil. Reduce the heat and let it simmer for about 2-3 minutes until the mixture thickens slightly.

Step 3: Add the cooked quinoa to the chocolate mixture and stir until well combined. Remove from heat and let it cool for a few minutes.

Step 4: Melt the dark chocolate chips and coconut oil in a double boiler or microwave until smooth and creamy.

Step 5: Coat the Easter egg molds with the melted chocolate, making sure to cover the sides and bottom well. Place the molds in the refrigerator for a few minutes until the chocolate sets.

Step 6: Spoon the quinoa chocolate mixture into the chocolate-coated molds, filling them up to the top. Smooth out the mixture with a spoon or spatula, making sure to leave some space for the top layer of chocolate.

Step 7: Pour the melted chocolate over the quinoa mixture, making sure to cover the top completely. Use a spoon or spatula to smooth out the chocolate, then place the molds in the refrigerator for at least an hour or until the chocolate has hardened.

Step 8: Once the chocolate has set, gently remove the Easter eggs from the molds by tapping them lightly. Serve and enjoy your guilt-free Easter treat!
