Ingredients:
- 1 cup Sabudana (Tapioca pearls)
- 2 medium-sized potatoes (boiled and mashed)
- 1/2 cup roasted peanuts (coarsely ground)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon grated ginger
- 1 green chilli (finely chopped)
- 1 tablespoon chopped coriander leaves
- Salt (to taste)
- Vegetable oil (for frying)
Instructions:
- Rinse 1 cup of Sabudana in cold water, and soak it for at least 3-4 hours or overnight. Drain the excess water using a strainer and keep it aside.
- In a mixing bowl, combine the soaked Sabudana, mashed potatoes, roasted peanuts, cumin seeds, grated ginger, green chili, chopped coriander leaves, and salt. Mix everything well.
- Take a small portion of the mixture and shape it into a ball. Repeat the process with the remaining mixture.
- Heat vegetable oil in a deep frying pan on medium heat. Once the oil is hot, gently drop a few Sabudana Vadas in the oil and fry until golden brown and crispy on all sides.
- Drain the fried vadas on a paper towel to remove any excess oil.
