Ingredients:
- 200g of rice noodles
- 1/4 cup of vegetable oil
- 2 cloves of minced garlic
- 1/4 cup of finely chopped onions
- 1/4 cup of finely chopped green onions
- 1/4 cup of chopped roasted peanuts
- 200g of chicken or paneer (cottage cheese), sliced into small pieces
- 2 eggs
- 1 cup of bean sprouts
- 1/4 cup of chopped fresh coriander leaves
- 1/4 cup of tamarind paste
- 2 tablespoons of soy sauce
- 2 tablespoons of jaggery (or brown sugar)
- 2 tablespoons of lime juice
- 1/2 teaspoon of red chili flakes
- Lime wedges, for serving
Instructions:
- Soak the rice noodles in warm water for about 30 minutes or until soft.
- In a wok or large skillet, heat the oil over medium-high heat. Add the garlic, onions, and green onions and sauté for about 1 minute.
- Add the chicken or paneer and cook for about 3-5 minutes, or until cooked through.
- Push the chicken or paneer to the side of the wok and crack the eggs into the center. Scramble the eggs until cooked and then mix everything together.
- Add the noodles and stir-fry for about 2-3 minutes or until heated through.
- Add the bean sprouts, peanuts, and coriander leaves and stir-fry for about 1-2 minutes.
- In a small bowl, whisk together the tamarind paste, soy sauce, jaggery, lime juice, and red chili flakes. Pour the sauce over the Pad Thai and stir-fry for about 1-2 minutes.
- Serve hot with lime wedges on the side.
