Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream

Instructions:

  1. In a large mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well blended.
  2. Press the mixture onto the bottom of a 9-inch springform pan. Use a flat-bottomed glass to press the mixture down and make it even.
  3. In another mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. In a separate mixing bowl, whip the heavy cream until stiff peaks form.
  5. Fold the whipped cream into the cream cheese mixture until well combined.
  6. Pour the mixture over the graham cracker crust and spread it evenly.
  7. Refrigerate the cheesecake for at least 4 hours or overnight until it is set.
  8. Before serving, run a knife around the edges of the pan to loosen the cheesecake, and then remove the sides of the pan.
  9. Garnish with fresh fruit, whipped cream, or chocolate sauce, if desired.
