So, to satisfy your sweet craving during fasting you will need the following:
Ingredients:
- 1/2 cup makhana (fox nuts)
- 1 liter full cream milk
- 1/2 cup sugar
- 2-3 green cardamom pods
- A few strands of saffron
- 2 tablespoons chopped nuts (almonds, pistachios, cashews)
- 1 tablespoon ghee (clarified butter)
Instructions:
- Heat 1 tablespoon of ghee in a heavy-bottomed pan over medium heat.
- Add the makhana to the pan and roast it for 5-7 minutes until it turns golden brown. Stir frequently to avoid burning.
- Once roasted, remove the makhana from the pan and keep it aside.
- In the same pan, add 1 liter of full cream milk and bring it to a boil. Reduce the heat and let it simmer for 20-25 minutes, stirring occasionally.
- Crush the green cardamom pods to a fine powder and add it to the milk.
- Soak a few strands of saffron in 1 tablespoon of warm milk and add it to the pan.
- Add sugar to the pan and stir well until it dissolves completely.
- Add the roasted makhana to the pan and let it simmer for another 10-15 minutes until the kheer thickens to a creamy consistency.
- Turn off the heat and let the kheer cool down to room temperature.
- Garnish with chopped nuts and a few strands of saffron.
- Refrigerate for 1-2 hours before serving.
