Ingredients needed:

• 2 cups of corn (fresh or frozen)

• 2 tablespoons of butter

• 2 cloves of garlic, finely chopped

• 1 onion, finely chopped

• 1-2 tablespoons of herbs (dried or fresh, such as oregano, thyme, or basil)

• Salt and pepper, to taste

• 2 eggs

• 1 cup of breadcrumbs

• Oil, for frying

Instructions:

1. Start by heating a large saucepan over medium heat. Add the butter and onions and cook until they’re softened.

2. Add the garlic and herbs and cook for a further minute.

3. Add the corn and season with salt and pepper. Cook for 5 minutes, stirring occasionally.

4. Remove from the heat and transfer the corn mixture to a large bowl. Allow to cool for 10 minutes.

5. Once the mixture has cooled, add the grated cheese and mix until combined.

6. In a separate bowl, whisk together the eggs.

7. Take a handful of the corn mixture and form it into a ball. Dip the ball into the eggs, then roll it in the breadcrumbs. Place on a plate or tray.

8. Repeat the process until all of the mixture is used up.

9. Heat the oil in a large saucepan or deep-fryer over medium heat.

10. Carefully add the cheese corn balls to the hot oil and cook for 3-4 minutes, or until golden brown.

11. Remove from the oil and place on a paper towel-lined plate to absorb any excess oil.

12. Serve the cheese corn balls hot, with your favorite dipping sauce.
