1. Begin by soaking the split urad dal in water for about 2 hours.

2. Once the dal has been soaked, drain the water and transfer the dal to a food processor. Add the cumin seeds and blend until the dal is finely ground.

3. Add the chopped garlic, coriander leaves, green chillies, and salt to taste. Blend until the mixture is well combined.

4. Heat the oil in a deep-fryer until it is hot.

5. Make small balls out of the dal mixture and flatten them into patties.

6. Deep-fry the patties in batches until they are golden brown.

7. Remove the patties from the oil and transfer them to a plate lined with paper towels to absorb the excess oil.

8. To make the garlic bread crust, mix the flour, butter, garlic, coriander leaves, baking powder, sugar, olive oil, and salt in a bowl.

10. Divide the dough into small balls, and roll each ball out into a flat disc.

11. Place a fried vada in the center of the disc, and fold the edges of the disc up and around the vada to form a pocket.

13. Remove the vadas from the oil and transfer them to a plate lined with paper towels to absorb the excess oil.
