Gujiya Recipe: A Timeless Indian Snack to fulfill your Holi Celebrations

Gujiyas are sweet dumplings that are commonly made in Uttar Pradesh, Rajasthan, and Madhya Pradesh. They are composed of maida or flour and filled with a delicious khoya and dried fruit mixture. 

This Indian dish is frequently prepared during the Holi celebration and is deep-fried in ghee before being covered with sweet syrup. The delicious filling enters your mouth through a break in the crisp exterior. There are many gujiya varieties available now with various fillings, including baked gujiyas, mawa gujiya, and even healthier options. However, nothing compares to the ageless classic. 

Here is a recipe for Gujiya, a popular Indian sweet that is often enjoyed during the Holi festival:

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup ghee or clarified butter
  • 1/2 cup milk
  • 1 cup grated khoya (dried milk)
  • 1 cup powdered sugar
  • 1/2 cup chopped mixed nuts (almonds, cashews, and pistachios)
  • 1/2 tsp green cardamom powder
  • Oil for deep frying

Instructions:

  1. In a large mixing bowl, combine the all-purpose flour and ghee. Mix it together until it resembles breadcrumbs. Add milk, little by little, to form a stiff dough. Cover and set aside for 30 minutes.
  2. In a separate mixing bowl, combine the khoya, powdered sugar, mixed nuts, and cardamom powder. Mix well to form a smooth mixture.
  3. Divide the dough into small equal-sized balls. Roll each ball into a thin round circle of about 4-5 inches in diameter.
  4. Place a tablespoon of the khoya mixture onto one-half of the rolled dough circle. Leave some space around the edges so you can seal it shut.
  5. Fold the other half of the dough over the mixture and press the edges together to seal it. Use a fork to create a pattern on the edges.
  6. Heat oil in a deep frying pan over medium heat. Once the oil is hot, gently add the gujiyas to the oil and fry them until they are golden brown.
  7. Remove the gujiyas from the oil with a slotted spoon and drain the excess oil on a paper towel.
  8. Serve the gujiyas hot or at room temperature. They can be stored in an airtight container for up to a week.
