Plant-based Keema Tacos recipe:

Ingredients:

  • For the TVP Keema:
  • 1 cup TVP
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 1 tbsp oil
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1/2 tsp salt
  • For the Tacos:
  • 8-10 taco shells
  • 1 avocado, diced
  • 1 tomato, diced
  • 1/2 cup shredded lettuce
  • 1/2 cup vegan cheese (optional)

Instructions:

  • Begin by rehydrating the TVP. Place the TVP in a bowl and pour enough hot water over it to cover it. Let it sit for about 10 minutes, then drain any excess water.
  • In a large skillet, heat the oil over medium-high heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
  • Add the rehydrated TVP, tomato sauce, water, chili powder, cumin, and salt to the skillet. Stir everything together until well combined, then let it cook for 5-7 minutes, stirring occasionally.
  • While the TVP keema is cooking, prepare the taco shells according to package instructions.
  • Once the TVP keema is done cooking, assemble the tacos by filling each shell with a generous scoop of the keema mixture. Top with diced avocado, tomato, shredded lettuce, and vegan cheese if desired.
  • Serve immediately and enjoy your delicious and nutritious Plant-Based Keema Tacos!
