Well, can’t really blame them as who doesn’t like biting into a soft and chewy ball made from roasted gram flour and ghee, coated with a generous layer of powdered sugar and fragrant cardamom powder. Ingredients:

  • 2 cups gram flour (besan)
  • 1/4 teaspoon baking powder
  • 1 1/2 cups water
  • 2 cups sugar
  • 1 1/2 cups water
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon chopped almonds
  • 1 tablespoon chopped pistachios
  • 1/4 cup ghee or clarified butter
  • Oil for deep frying

Instructions:

  1. In a mixing bowl, add besan, baking powder, and water. Mix well to make a smooth batter without lumps.
  2. Heat oil in a deep frying pan. Hold a perforated spoon or boondi ladle over the hot oil and pour a ladleful of batter on it. Tap the spoon gently so that tiny drops of batter fall into the hot oil.
  3. Fry the boondis until they turn golden brown. Remove with a slotted spoon and drain excess oil.
  4. In another pan, add sugar and water. Heat the mixture on medium heat until the sugar dissolves completely. Once it dissolves, cook until the syrup thickens and reaches a 1-string consistency.
  5. Add cardamom powder and mix well. Turn off the heat and add the boondis to the syrup. Mix well so that the syrup coats the boondis evenly.
  6. Let the mixture cool down slightly. Add chopped almonds, pistachios, and ghee. Mix well.
  7. Grease your palms with ghee and take a small portion of the mixture. Roll it into a ball shape.
  8. Repeat the same with the remaining mixture.
  9. Garnish with some chopped nuts and let it cool down completely before serving.
