Pad Thai: A Recipe to taste the magic of Thailand’s Street Cuisine

Pad Thai is a delicious and satisfying dish that is sure to leave you wanting more. Here’s a Pad Thai recipe that can be easily made using ingredients commonly available in India:

Ingredients:

  • 200g of rice noodles
  • 1/4 cup of vegetable oil
  • 2 cloves of minced garlic
  • 1/4 cup of finely chopped onions
  • 1/4 cup of finely chopped green onions
  • 1/4 cup of chopped roasted peanuts
  • 200g of chicken or paneer (cottage cheese), sliced into small pieces
  • 2 eggs
  • 1 cup of bean sprouts
  • 1/4 cup of chopped fresh coriander leaves
  • 1/4 cup of tamarind paste
  • 2 tablespoons of soy sauce
  • 2 tablespoons of jaggery (or brown sugar)
  • 2 tablespoons of lime juice
  • 1/2 teaspoon of red chili flakes
  • Lime wedges, for serving

Instructions:

  1. Soak the rice noodles in warm water for about 30 minutes or until soft.
  2. In a wok or large skillet, heat the oil over medium-high heat. Add the garlic, onions, and green onions and sauté for about 1 minute.
  3. Add the chicken or paneer and cook for about 3-5 minutes, or until cooked through.
  4. Push the chicken or paneer to the side of the wok and crack the eggs into the center. Scramble the eggs until cooked and then mix everything together.
  5. Add the noodles and stir-fry for about 2-3 minutes or until heated through.
  6. Add the bean sprouts, peanuts, and coriander leaves and stir-fry for about 1-2 minutes.
  7. In a small bowl, whisk together the tamarind paste, soy sauce, jaggery, lime juice, and red chili flakes. Pour the sauce over the Pad Thai and stir-fry for about 1-2 minutes.
  8. Serve hot with lime wedges on the side.
